How to Brew Better Coffee at Home (No Barista Required)
A great machine is only half the cup. These simple habits will take your home coffee from "fine" to genuinely good — no expensive gear needed.
Step 1: Start with fresh beans and the right grind
Coffee is freshest within weeks of roasting, so buy in small amounts and grind just before brewing. Match the grind to your method: coarse for French press, medium for drip, fine for espresso. The wrong grind is the most common reason home coffee tastes off.
Step 2: Get the ratio right
- A solid starting point is about 1 to 2 tablespoons of coffee per 180ml (6 oz) of water.
- Too weak? Add coffee, don't reduce water.
- Too bitter? Use a coarser grind or slightly cooler water.
Step 3: Mind the water
- Use filtered water — coffee is 98% water, so quality matters.
- Aim for water just off the boil (around 90–96°C), not boiling.
- Boiling water scorches the grounds and adds bitterness.
Step 4: Keep it hot, drink it fresh
Coffee starts to degrade the moment it's brewed. Pour it fresh, and if you need to keep it warm, use an insulated carafe rather than a hot plate, which "cooks" coffee and turns it bitter within minutes.
Step 5: Adjust one thing at a time
If a cup isn't right, change a single variable — grind, ratio, or temperature — and taste again. Tweaking everything at once just hides what actually made the difference.
